Ingredients

This dish uses a handful of simple, wholesome ingredients that pack a punch of flavor when roasted together.

  • 1 1/2 pounds baby potatoes, halved
  • 1 pound Italian sausage links (mild or spicy)
  • 2 bell peppers (red, orange, or yellow), sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional, for spice)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

This easy traybake comes together in just a few simple steps, making it a go-to meal for any night of the week.

  1. Preheat the oven:
Set your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan with olive oil to prevent sticking and ensure even roasting.
  2. Prepare the ingredients:
Slice the baby potatoes in half to create even cooking pieces. Cut the bell peppers into strips for a pop of sweetness and color. Slice the onion thinly to add a caramelized depth of flavor. Mince the garlic finely so it distributes evenly across the dish, infusing it with a rich aroma.
  3. Season everything:
In a large bowl, toss the potatoes, peppers, onion, and garlic with olive oil, oregano, basil, red pepper flakes (if using), salt, and black pepper. Stir well to ensure each ingredient is coated with the herb-infused oil, which helps in creating a beautifully roasted, flavorful dish.
  4. Assemble the traybake:
Spread the seasoned vegetables evenly in the baking dish. Nestle the Italian sausage links on top, making sure they have space between them to roast properly. This allows the flavors to mingle while ensuring the sausages develop a crispy, golden-brown crust.
  5. Bake to perfection:
Place the dish in the preheated oven and roast for 35–40 minutes. Halfway through cooking, flip the sausages and stir the vegetables to promote even browning. The potatoes should be crispy on the edges and fork-tender, while the sausages should be fully cooked with a slightly charred exterior that enhances their deep, savory flavors.
  6. Garnish and serve:
Remove the tray from the oven and sprinkle freshly chopped parsley over the top. This final touch adds a burst of freshness that balances the richness of the dish. Serve immediately with crusty bread to mop up the delicious pan juices or alongside a crisp green salad.

Tweaks and Additions

This traybake is incredibly versatile, allowing you to make adjustments based on your preferences.

  • Use different sausages:
Swap out traditional Italian sausage for chicken sausage, chorizo, or bratwurst for a different flavor profile. Chicken sausage offers a leaner alternative, while chorizo adds a smoky, spiced kick.
  • Make it extra crispy:
If you love extra crispy potatoes, spread them out more on the baking sheet and roast them for an additional 10 minutes before adding the sausage and peppers. This method gives them a golden crunch while keeping the insides soft and fluffy.
  • Add a splash of vinegar:
A drizzle of balsamic vinegar or a squeeze of fresh lemon juice before serving adds a bright, tangy contrast to the rich, roasted flavors. The acidity helps cut through the richness of the sausage and enhances the sweetness of the peppers.
  • Include more veggies:
Toss in zucchini, cherry tomatoes, or mushrooms for additional layers of flavor and texture. Zucchini adds a subtle sweetness, cherry tomatoes bring bursts of juiciness, and mushrooms deepen the umami flavors.
  • Make it cheesy:
Sprinkle some grated Parmesan or crumbled feta over the dish during the last five minutes of roasting for a nutty, salty finish. The cheese melts slightly, creating an extra layer of richness that complements the dish beautifully.
  • Go low-carb:
Replace the potatoes with cauliflower or Brussels sprouts for a lighter alternative. Cauliflower soaks up the flavorful juices, while Brussels sprouts add a slightly nutty, crispy bite.

This Italian sausage and pepper traybake is the ultimate fuss-free meal that delivers on flavor, texture, and heartiness. It’s an easy dinner that’s as satisfying as it is simple to make, and best of all—everything roasts together in one pan!

  1. Let there be a print option so we don’t have to deal with all of these ads while trying to read the recipe. It’s extremely annoying to have ad after ad when all you need is what is in the recipe. I almost gave up except I had already purchased the ingredients. If not for that I would have deleted this pin in no time flat. GOT TO PRINT!!!!
